What chemical drain cleaners do – and what they don't

Most commercially available drain cleaners are based on sodium hydroxide (caustic soda) or strong acids. They are effective against hair and protein – both of which dissolve quickly in alkali. With fat, the situation is different.

Chemically, fat is an ester compound made of glycerin and fatty acids. Alkali breaks this bond – a process known as saponification. The result is soap, which is water-soluble and flows away. Sounds like a solution. But it isn't.
